Wednesdays Unplugged – Frosted Peanut Butter Rice Krispie Bars

Memorial Day weekend always prompts me that the summer season is beginning, even when it isn’t yet quite warm enough. That reminds me of picnics and good old-fashioned decadent bar cookies and chocolate. This recipe is a long-time standby that I just had to make over the weekend. They always seem to disappear very quickly!

RECIPE OF THE WEEK

FROSTED PEANUT BUTTER RICE KRISPIE BARS

1/2     cup light corn syrup

1/2     cup sugar

1          tsp vanilla

3/4     cup peanut butter

3          cups (rounded) Rice Krispies

1           cup (rounded) semi-sweet chocolate chips

1           cup (scant) butterscotch chips

1            drop lemon extract

  • Bring syrup and sugar to a boil
  • Add vanilla, peanut butter and mix well
  • Pour over Rice Krispies in a bowl
  • Mix well
  • Pat into buttered 9 x 13 pan
  • Let cool
  • Melt chips in microwave
  • Add lemon extract
  • Spread over Rice Krispie mixture
  • Cool, cut into pieces, and watch them disappear!
