QUOTE OF THE WEEK

"What can you do to promote world peace? Go home and love your family." ~ Mother Teresa

You can see there’s a whole lotta love and laughter going on between Papa John and grandsons Radley and Khalen in the photo below. The box on the piano is evidence that we celebrated our anniversary last week…37 years!

RECIPE OF THE WEEK

Crockpot Asian Spareribs

based on recipe #125757 from Recipezaar.com

NOTE: this is a large family-size recipe, which also makes good leftovers

5-6         lbs pork spareribs (boneless preferred if available)

2             Tbsp olive oil

1 1/4     cup pure pineapple juice

3/4         cup light soy sauce

3/4         cup Hoisin sauce

6              Tbsp vinegar

6              Tbsp peanut butter

3/8         cup packed brown sugar

4 1/2     tsp minced garlic from a jar

2 1/4     tsp ground ginger

3/4         tsp red pepper flakes

1              bunch green onions, thinly sliced

Place spare ribs in large crock pot. Whisk together remaining ingredients and pour over ribs. Cook 10-12 hours on low…delicious!

NOTE: can also use sauce as a marinade and cook ribs on the grill or bake in the oven
