Wednesdays Unplugged – Southwestern Chicken

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Sina-kpt Last week our birthday buddy grandchildren celebrated their second and seventh birthdays. We celebrated by going to the Water Park of America, but I had to share this photo from French Park a few weeks ago. They are so cute together… Sina's big cousin Khalen loves hanging out with her, and really watches out for her!

This week we are in California. I am attending a conference in San Francisco, but we are also spending time in Sacramento before and after with my forever friend cousin who was my best buddy growing up. Isn't that what life is really all about?

RECIPE OF THE WEEK

This week's recipe was from another dear friend who shared it with us up at Lake Superior last month. It's a super easy crockpot dish that was also super delicious!

SOUTHWESTERN CHICKENSouthwestern chicken

  • 2 cans black beans, rinsed and drained
  • 2 cans whole kernel corn
  • 2 16 ounce jars salsa
  • 4 chicken breasts

Combine all in crock pot and cook on low for 8 hours or on hi for 4 hours. Shred chicken in pot and stir to mix. Serve over rice, garnished with salsa and sour cream.
