Wednesdays Unplugged – Almond Bars

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Since last Wednesday schools have been closed three days because of dangerously cold temperatures and wind chills. In between those frigid days my husband's brothers came from Wisconsin and North Dakota to get together for a warm vist.
 
RECIPE OF THE WEEK
 
This week's recipe from Taste of Home is a super simple one for super delicious almond bars… that look like lemon bars! Even my husband who doesn't like almonds loved these bars that have almond flavor without the nuts. Crispy on the top and gooey on the inside… yummy through and through.
 
TASTE OF HOME
  • Almond bars4 eggs
  • 2 cups sugar
  • 1 cup butter, melted
  • 2 cups flour
  • 1 1/2 teaspoons almond extract
  • Confectioners' powdered sugar

In a large bowl, beat the eggs and sugar until lemon-colored. Beat in butter and extract; gradually stir in the flour and mix well. Spread into a greased 13 x 9 inch baking pan.

Bake at 325 degrees F for 30-35 minutes or untila toothpick inserted near the center comes out clean. Cool on a wire rack. Sprinkle with powdered sugar.
